Honey plum is a type of wet candied fruit, made from fresh plums such as Sanhua Li or Quan Huang. The production process involves several key steps to ensure the final product is flavorful, crisp, and retains its natural color and texture. First, the raw plums are carefully processed. After harvesting, they undergo a peeling step to remove the waxy surface layer, allowing the sugar to penetrate more effectively into the flesh. This step is crucial for achieving the desired texture and sweetness. Next, the plums are treated with a hardening and color protection solution. Since plums contain tannins that can cause discoloration during processing, a mixture of 0.1% calcium chloride and 0.1% sodium bisulfite is used. The plums are soaked in this solution for 8 hours, then rinsed and left to drain. The next stage involves preparing the sugar syrup. For every 50 kg of fresh plums, approximately 25–30 kg of sugar is used to make a 40% sugar solution. A small amount of citric acid (0.1%) and potassium sorbitol (0.05%) are added to enhance flavor and preserve quality. The syrup is boiled before being used for impregnation. The translucent sugar process follows. After the first day, the sugar concentration in the solution drops significantly, usually to around 20%. To restore the concentration, the diluted syrup is concentrated by heating, increasing the sugar content by about 5%. This concentrated syrup is then returned to the plums for further soaking. This cycle is repeated every 1–2 days, ensuring gradual sugar absorption without direct heat on the fruit. Without vacuum equipment, this process typically takes 15–20 days until the sugar concentration reaches 55–60%, and the internal sugar content of the fruit reaches at least 50%. Once the desired sugar level is achieved, the plums are removed from the syrup and dried in a controlled environment at 60–70°C for 16–20 hours. The moisture content is reduced to between 25–28%, giving the product its characteristic chewy yet firm texture. Finally, the honey plums are packaged in pouches or plastic boxes. Due to their higher water content, these candied fruits have a total sugar content of around 50%, but the acidity balances the sweetness, resulting in a pleasant sweet-and-sour taste. The product maintains the bright color of fresh plums, remains plump, and does not shrink, which contributes to a higher yield. Properly sealed packaging ensures a shelf life of up to six months. Overall, honey plum offers a unique combination of flavor, texture, and appearance, making it a popular choice among candied fruit lovers.
