Yuci County in Shanxi Province has long been recognized for its effective use of cave storage to preserve pears, with excellent results that make it a model worth promoting in northern regions. The method is both practical and efficient, ensuring pears remain fresh throughout the winter months. The process begins by creating an entry triangle vent hole at the cave entrance, while also digging moderate ventilation holes at the bottom of the inner walls. These holes help regulate temperature and airflow, preventing moisture buildup and maintaining a stable environment.
Along the length of the cave, three mounds are constructed on both sides and in the center—each about 0.4 to 0.5 meters high and 0.3 to 0.5 meters wide. These mounds serve as the foundation for the pear bed. Before placing the pears, a layer of sorghum stalk curtains is laid down to provide cushioning and prevent bruising. The selected pears are then arranged on top of this layer, stacked to a height of 1 to 1.5 meters. This arrangement allows for proper air circulation beneath the pears, making winter management more convenient and effective.
During the early stages of winter, when temperatures begin to drop, thick paper can be used to cover the doors and windows, helping to retain warmth inside the cave. When it gets extremely cold, straw is placed outside the door, leaving only the three upper ventilation holes open. If the weather becomes too harsh, these vents can be temporarily covered. Once spring arrives and temperatures rise after the vernal equinox, the straw blocking the door is gradually removed, allowing natural airflow to resume and preparing the cave for the next season. This technique not only preserves the quality of the pears but also ensures a sustainable and cost-effective storage solution for local farmers.
